Eating Fish

On the suggestion of Pancake Goddess, I made fish tacos. I didn't quite have enough fish (cod), so I added some boneless, skinless chicken breast.

EVERY. SINGLE. MEMBER. OF. MY. FAMILY. ATE. MORE. THAN. ONE.

Yes, that was a yell. At least two members "hate" fish and those same two "hate" anything different, yet they ate it with gusto.

OK, maybe not quite as much gusto as usual. They only ate two and four respectively, but that was enough to not have leftovers:)

Mmmmmm - I made fish tacos last night, and (not to toot my own horn but) they were AMAZING!
I can't take the credit for the fish - I bought a box of tortilla/chipotle/lime crusted tilapia filets from Costco. But I did make the bean/corn salsa that we topped it with. SO YUM!

we made those last night too - how bizarre. It is ridiculously easy. We top with organic broccoli slaw, I mix in mayo and lime (or any kind of citrus - actually last night it was strawberry lemonade, lol). Also peach/mango salsa. I am so happy your family likes them - that's a big accomplishment around here.

PG, I don't think anyone would eat Broccoli Slaw here but me and eldest. The other three don't do "different" very well...don't do "doesn't meet my expectations."

I heart stir fried broccoli slaw though or replacing noodles with broccoli slaw.

oh! stir fried broccoli slaw. what do you put in that? yea - only the three oldest in this house eat the slaw. two more than that will eat the salsa.

PG, stir fried brocc slaw...that would imply I have recipes. I'm a "dump" cook. I open the cupboard and dump things. So....if I were making it tonight, I'd get out the wok and scramble a few eggs ("flat" scramble not bumpy). Then I'd wipe out the wok and add oil and garlic and maybe onion. Toss in the brocc slaw, and then whatever sauce I felt like conjuring up....water, spash of OJ or lemon juice, soy or tamari, maybe some black bean sauce....some thickener (corn starch, guar gum or arrowroot--i prefer guar or arrowroot as they are less opaque),

Or if I were using the brocc slaw in place of rice or noodles, I'd just oil and red pepper, maybe chili powder to add some flavor and put whatever else over the top.
